Cembra Cantina di Montagna is expanding its TrentoDoc line with Oro Rosso Blanc de Noirs Riserva, a new Traditional Method sparkling wine made from Pinot Noir grapes that strengthens the “Oro Rosso” project. The Trentino cooperative, a benchmark for heroic viticulture in the Cembra Valley, thus introduces a new interpretation of the porphyritic terroir, which was already at the heart of the previous Dosaggio Zero Riserva from Chardonnay in the same “Oro Rosso” line. The new Trentodoc is made from 85% Pinot Noir from the splendid 2019 harvest, with 15% reserve wines aged in barriques.
TRENTODOC FROM PINOT NOIR IN THE CEMBRA VALLEY
The new Blanc de Noirs comes from vineyards located between 600 and 700 meters above sea level, in a context characterized by significant temperature shifts and steep slopes. The Pinot Noir grapes are hand-harvested and carefully vinified to preserve their integrity. After temperature-controlled fermentation, the wine ages on the fine lees in stainless steel for about six months, followed by 48 months in the bottle.
To be precise, the tirage took place during 2021 and the disgorgement in December 2025. The result is a Trentodoc with the typical verticality of Cembra Valley wines. A lively acidity, which time will further refine, achieving the desired precision and balance. The aromatic profile evokes small red fruits and bread crust, accompanied by a distinct mineral component.
PORPHYRY AT THE HEART OF THE ORO ROSSO PROJECT
The name “Oro Rosso” refers to porphyry, a volcanic rock that is a symbol of the Cembra Valley and a historical resource for the local population. This geological element directly affects the vineyard soils and contributes to defining the wines’ flavor profile, particularly in terms of sapidity and freshness.
For years, the winery has been developing an identity-driven path linked to this element, translating the characteristics of an extreme territory into the glass, also marked by the presence of over 700 kilometers of dry-stone walls.

“With the Blanc de Noirs, we wanted to explore another expression of our mountains,” says Stefano Rossi, the winery’s enologist. “Pinot Noir,” he continues, “grown at these altitudes, manages to maintain freshness, precision, and elegance. The long aging in the bottle amplifies its complexity, while the porphyry provides an accentuated sapidity in the glass, which is the most authentic signature of wines Made in Val di Cembra.”
