The new Cabreo Winery by Ambrogio and Giovanni Folonari Tenute has been inaugurated in Greve in Chianti, a facility dedicated to the production of the estate’s Supertuscans. The project bears the signature of Florentine architect Carlo Ludovico Poccianti and is part of the wine tourism development path of the Cabreo Estates.
The ceremony opened with a ribbon-cutting in the presence of local authorities and specialized wine journalists. During the event, the mayor of Greve in Chianti Paolo Sottani conferred honorary citizenship on Ambrogio Folonari, recognizing his contribution to the enhancement of the territory and the revival of Tuscan wine.

THE WINE TOURISM PROJECT OF THE CABREO ESTATES
According to Giovanni Folonari, the new facility completes the hospitality project developed at the Cabreo Estates, where the Borgo del Cabreo and Pietra del Cabreo relais are located, along with a restaurant dedicated to Tuscan cuisine reinterpreted in a contemporary key.
“Thanks to this hospitality project, we received the prestigious Vinitaly Territory Ambassador recognition, which celebrates the estate’s commitment to the territory and our authentic promotion of Made in Italy,” added Folonari.
The new winery was built with an investment of 7 million euros. Inside, there are over 300 wood vessels including tonneaux, barriques, and seasoned casks. The facility also has steel tanks for winemaking and storage, with a total capacity of 4,500 hectoliters.
Among the technological equipment is an optical sorter capable of analyzing each individual berry during the grape harvest phase. The stacked tanks also allow for the separation of the estate’s different crus. There is also an archive dedicated to the historic vintages of Supertuscans produced at the Cabreo Estates.
TECHNOLOGY AND MATERIALS FROM TUSCAN TRADITION
The spaces of the new Cabreo Winery are divided into three areas. The first is dedicated to winemaking in state-of-the-art steel tanks with thermal control. The second houses the barrel cellar, designed to maintain constant temperature, humidity, and air circulation. The third area is the tasting room, with a large central table for wine tastings.
For the interiors and exteriors, materials linked to Tuscan architectural tradition were used, including hand-worked Impruneta terracotta, wrought iron, natural wood, and local stone. These are complemented by contemporary elements such as steel, burnished bronze, and scenic lighting.
To celebrate the winery’s opening, verticals of Cabreo Il Borgo Toscana IGT and La Pietra Chardonnay Toscana IGT were organized, led by Giovanni Folonari and winemaker Roberto Potentini and reserved for industry professionals.
During the inauguration, a work by Florentine artist Betty Soldi was also presented. The work was created specifically for the Cabreo Estates as an interpretation of the Folonari family’s values.
