International chef Heinz Beck takes charge of the entire culinary offering at the Orient Express Venice hotel. A leading figure in European fine dining and holder of three Michelin Stars, Beck will oversee all culinary experiences at the property together with the Beck and Maltese Consulting Team.

The project encompasses every dining space in the historic Venetian palazzo, from the fine dining restaurant to the more informal settings. The cuisine will draw inspiration from the Venetian lagoon and surrounding territory. At the heart of the chef’s culinary vision are technical precision, clarity of flavors, and the pursuit of balance and lightness.

The operational execution of the offering will be entrusted to Pasquale Rivetti, Chef in Residence. The culinary project is set within the architectural context curated by architect and interior designer Aline Asmar d’Amman, who has been leading the restoration of Orient Express Venice since 2018. The intervention involves one of the city’s historic palazzos and aims to enhance its architectural heritage with a contemporary language and dialogue with the Venetian art scene.

HEINZ BECK VENICE: THE FINE DINING RESTAURANT

The fine dining restaurant Heinz Beck Venice will accommodate twenty covers and will be open exclusively for evening service. The cuisine reflects the approach that has made the chef internationally renowned: an offering based on balance, lightness, and attention to the nutritional dimension of dishes. Ingredients come primarily from the Venetian lagoon and the Mediterranean.

Among the planned preparations are amberjack with smoked buttermilk, fresh peas, and preserved lemon, and red prawn served with carrots and lagoon seaweed. Dishes that showcase local ingredients through contemporary techniques and a personal interpretation of Italian tradition. The restaurant is located in the palazzo’s former Orangerie. The design by Aline Asmar d’Amman features sculpted glass forms inspired by marine life. The light installations project fluid reflections throughout the space and emerge from the dialogue between the architect and the chef on the lagoon’s edible flowers.

LA CASATI: VENETIAN CUISINE IN AN INFORMAL KEY

Alongside the fine dining, the restaurant La Casati offers a more informal experience, open for both lunch and dinner. The offering showcases local flavors with seasonal ingredients and recipes tied to Venetian tradition, maintaining the same culinary philosophy as Heinz Beck’s cuisine.

The spaces are inspired by the figure of Marchesa Luisa Casati, known for her eccentricity. The theatrical interpretation of the spaces is enriched by artisanal materials and decorative textures. During summer, the restaurant extends outdoors thanks to a 300-square-meter garden, one of the rare green spaces in Venice’s historic center.

WAGON BAR AND SALONE VITTORIA

The hotel’s culinary offering also includes the Wagon Bar, which evokes the golden age of rail travel. The setting is inspired by the lounge bars of the original Orient Express carriages and is reinterpreted in Art Déco style. The bar remains open until late evening and offers a selection of light dishes, classic cocktails, and signature creations.

On the piano nobile is the Salone Vittoria, the historic ballroom of Venetian nobility. Today it hosts breakfasts, gala dinners, and private celebrations beneath 18th-century chandeliers. The menus, created by Heinz Beck and the Beck and Maltese Consulting Team, draw on Venetian hospitality traditions through refined service and a culinary offering built around the palazzo’s historic context.

With the arrival of Heinz Beck, Orient Express Venice places gastronomy at the heart of the guest experience. The culinary offering encompasses all spaces within the property and combines fine dining, informal moments, and occasions dedicated to events.
