A rosé sparkler born from native grape varieties, processed in autoclave. The delicate color and fine perlage introduce a fresh sip, ideal for seafood cuisine. A label that expands the Notte Rossa line with a carefree offering perfect for summer.
Notte Rossa launched its Extra Dry Rosé Sparkling Wine a few years ago, a rosé “bubble” that aims to showcase the typical red grapes of Salento in a modern and versatile way. Produced entirely in Puglia, Notte Rossa rosé sparkling wine comes from espalier-trained vineyards at an altitude of about 100 meters above sea level, in an area characterized by warm climate, low rainfall, and marked temperature variations.
The hand-harvested grapes, picked early but at proper ripeness for producing a naturally “flavorful” sparkling wine, are selected to maintain a balanced acidity profile, essential for subsequent refermentation. Harvest typically occurs in the last weeks of August, during the cooler morning hours.
AUTOCLAVE VINIFICATION AND BOTTLE AGING
The vinification of Notte Rossa Extra Dry Rosé Sparkling Wine follows a process that emphasizes delicacy and elegance. The grapes undergo gentle pressing, yielding the first fraction of free-run must. This is fermented at low temperature to preserve aromas and freshness.
The secondary fermentation takes place in autoclave, where the wine rests for about a month in contact with its own yeasts. Subsequent aging continues in bottle, always at controlled temperature. The result is a sparkling wine with fine and persistent perlage, also suitable for serving by the glass.
NOTTE ROSSA EXTRA DRY ROSÉ: TASTING AND PAIRINGS
In the glass, Notte Rossa Extra Dry Rosé presents a brilliant pale pink color with onion-skin reflections. The aromatic profile highlights citrus notes and fragrant red berries. On the palate it shows full of fruit, dry and appealing, with marked and enticing freshness.
A sparkling wine designed to accompany seafood cuisine and light fish or vegetable dishes, even with some structure. Perfect also as an aperitif, it finds its ideal expression served at 6-8°C. Just one of the versions of Notte Rossa sparkling wines, which also include a “white” version.
A VERSATILE OFFERING FOR EVERYDAY CONSUMPTION
With this rosé sparkling wine, Notte Rossa strengthens its positioning in the Extra Dry sparkling wine segment through a reference that appeals to both occasional consumers and enthusiasts. The production approach, which aims for quality through well-established winemaking techniques, delivers a product consistent with the brand’s line: accessible, yet with a precise territorial identity.
Notte Rossa Extra Dry Rosé therefore represents a valid alternative also in the Horeca channel, thanks to its versatility at the table and ease of drinking. A label that captures the growing trend of Italian rosé sparkling wines, tied to the territory and careful production, well beyond passing fads.
