Cava Meeting 2025 kicks off today: three days of discussion and tastings dedicated to the Spanish traditional method. From November 9 to 11, 2025, the city of Sitges, on the Catalan coast, will host Cava Meeting 2025, the benchmark event for the world of Cava. The event, promoted by the Consejo Regulador del Cava (DO CAVA), will bring together producers, international experts, sommeliers, journalists, and publications—including Winemag.it—from around the world. The present and future of Spanish traditional method will be discussed through an intensive program of meetings, roundtables, and tastings.
The event will open on Sunday, November 9 at 8 PM with a welcome dinner at the Beso restaurant at ME Terramar Sitges Hotel, dedicated to the theme The Integral Manufacturer Quality Seal. A convivial moment designed to welcome guests and speakers, previewing the in-depth sessions to follow.
MONDAY, NOVEMBER 10: THE DAY OF DISCUSSION AND DIALOGUE
On Monday, November 10, the program will officially begin at 9:00 AM with the welcoming of participants, followed by the opening address by DO Cava president Javier Pagés. Immediately after, from 9:25 to 10:45 AM, the first conference session entitled “The excellence of the Traditional Method | Innovations and future challenges” will take place. The technical and scientific evolution of the traditional method will be discussed.
Speakers include Charles Zuker (Columbia University, Chile), Gabriel Lepousez (Pasteur Institute, France), Cristina Mercuri (Mercuri Wine Club, Italy), and Pere Pons Mercadé (Rovira i Virgili University and Cava Miquel Pons, Spain). They will offer an overview of innovations and challenges related to sparkling wine production.
From 10:45 AM to 12:10 PM, the tasting “Great Cavas born in the vineyard: expressions of terroir” will be led by Sarah Jane Evans MW (Decanter) and Roberto Durán MS (67 Pall Mall Singapore). The session will highlight the diversity of DO Cava terroirs through a selection of labels from exceptional single vineyards.
Simultaneously, at 11:00 AM, the grand Cava Meeting showroom will open, featuring over 190 Cava de Guarda Superior from more than 60 wineries in the region. It will remain open until the end of the event.
THE BUSINESS OF CAVA AND ITS RESPONSIBILITIES
The morning will continue with the panel “The business of Cava” (12:15 PM – 12:45 PM), moderated by María Naranjo (ICEX Spain Trade and Investment). Guests include Xavier Ybargüengoitia (former managing director of Estates & Wines – Moët-Hennessy), Jordi Paronella (José Andrés Group), Laura Williamson MS (Unlock Your Palate Inc.), and Harriet Kininmonth (The Wine Society). They will discuss the economic and commercial dynamics of the sector.
At 12:45 PM, a joint tasting titled “Cava & Sherry: The magic of biologic and limestone” will offer a sensory comparison between the two denominations. It will feature Ferran Centelles (elBulliFoundation), Robert Tetas (Sobretablas), and Albert Tomás (Enrique Tomás ham shops), accompanied by a pairing with Iberian ham.
Lunch will be served from 1:30 to 3:00 PM. This will be followed by an important debate on “Is DO CAVA just a business, or also a responsibility?” (3:00 PM – 4:20 PM), moderated by Pedro Ballesteros MW. Leading industry figures will participate, including Jordi Amell (Castell d’Or), Sergio Fuster (Raventós Codorníu), Luciano García-Carrión (García Carrión), Josep Palau (Freixenet Group), Pere Ventura, Marta Vidal (Vallformosa), Marta Casas (Parés Baltà), and Pere Guilera (Cava Guilera).
The focus will be on sustainability, vineyard protection, and the collective responsibility of producers toward the territory.
THE GREAT RESERVES AND THE DAY’S CLOSING
At 4:25 PM, one of the most anticipated tastings will begin: “Icons of time: Cavas aged for more than 100 months”. It will be led by Essi Avellan MW and journalist Ramon Francàs. A moment dedicated to Cavas with extended aging, symbols of elegance and complexity.
The day will close at 6:00 PM with closing remarks from Javier Pagés, Ana Rodríguez Castaño (Spanish Ministry of Agriculture), and Òscar Ordeig i Molist (Catalan Ministry of Agriculture).
In the evening, at 9:00 PM, the Gala Dinner will feature pairings between Cava and cuisines from around the world, celebrating the universality of this Spanish sparkling wine.
TUESDAY, NOVEMBER 11: CAVA IN THE FIELD
The final day, Tuesday, November 11, will be dedicated to visits to DO Cava wineries. It will offer participants the opportunity to discover the vineyards and production processes firsthand. The detailed visit schedule will be announced during the event.
With over 190 labels on display, dozens of international experts, and a perspective that combines innovation, identity, and sustainability, Cava Meeting 2025 confirms itself as one of the most significant events. It will be important for promoting the Spanish traditional method and its future on the global stage.
