This historic Hungarian wine region is famous for its sweet botrytized wines. The request was submitted by the <strong>Council of Wine Communities of the Tokaj Wine Region<\/strong> and covers various styles, from sweet wines to sparkling wines. A three-month period stipulated by European regulations is now open for any objections from Member States, third countries, or parties with a legitimate interest.  <\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-ba6a20af\"><h5 class=\"uagb-heading-text\"><strong>REDUCTION OF WINE STYLES IN THE TOKAJ PDO<\/strong><\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">One of the most significant interventions concerns the simplification of the designation&#8217;s production range. The specification proposes the elimination of several styles considered marginal in recent years. Specifically, the following will disappear:  <\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Asz\u00faeszencia<\/strong>: the most extreme and concentrated style in the Tokaj universe, linked to botrytized <strong>asz\u00fa<\/strong> grapes, with a very sweet and rich profile. Not to be confused with the Eszencia style, the <strong>rarest and most concentrated Tokaj specialty<\/strong> obtained from the <strong>must that drips spontaneously from botrytized asz\u00fa berries<\/strong> under their own weight, without pressing, which remains at the top of the quality pyramid. <\/li>\n\n\n\n<li><strong>Dry Ford\u00edt\u00e1s<\/strong>: wine obtained by adding must or wine to the <strong>pressed pomace of asz\u00fa grapes<\/strong>, but in the <strong>dry<\/strong> version.<\/li>\n\n\n\n<li><strong>Dry M\u00e1sl\u00e1s<\/strong>: wine obtained by refermenting or aging must or wine on <strong>Asz\u00fa or Szamorodni lees<\/strong>, also in the <strong>dry<\/strong> version.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">According to documentation published by the European Commission, the choice aims to &#8220;concentrate production on a more limited number of wines to <strong>strengthen the identity and recognition of the Tokaj PDO on the markets<\/strong>.&#8221;<\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-d32c5e36\"><h5 class=\"uagb-heading-text\"><strong>SZAMORODNI DIVIDED INTO DRY AND SWEET<\/strong><\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">The specification also proposes formally separating the <strong>Szamorodni<\/strong> style into two distinct categories:<\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Dry Szamorodni<\/strong><\/li>\n\n\n\n<li><strong>Sweet Szamorodni<\/strong><\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Until now, the two versions were included in the same category, despite having different sensory descriptions. The amendment aims to &#8220;<strong>make the classification clearer<\/strong> without introducing substantial changes to production characteristics.&#8221; <\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-23b9b19a\"><h5 class=\"uagb-heading-text\"><strong>NEW PARAMETERS FOR RESIDUAL SUGAR AND GRAPE QUALITY<\/strong><\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">Technical amendments also include updates to the analytical and organoleptic parameters of the wines. In particular, an increase in the minimum residual sugar content for <strong>late harvest<\/strong> wines is planned, to make their profile more consistent with that of <strong>sweet Szamorodni<\/strong>. <\/p>\n\n<p class=\"wp-block-paragraph\">At the same time, the minimum sugar content required for grapes intended for various wine styles is being increased, with the aim of standardizing the quality levels of the designation.<\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-692c4ca3\"><h5 class=\"uagb-heading-text\"><strong>REDUCTION OF WOOD AGING PERIODS<\/strong><\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">The specification also proposes a <strong>revision of aging times in wooden barrels<\/strong> for some of the designation&#8217;s historic styles. The reduction in the maturation period will affect: <\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Tokaji Asz\u00fa<\/strong><\/li>\n\n\n\n<li><strong>Dry Szamorodni<\/strong><\/li>\n\n\n\n<li><strong>Sweet Szamorodni<\/strong><\/li>\n\n\n\n<li><strong>Ford\u00edt\u00e1s<\/strong><\/li>\n\n\n\n<li><strong>M\u00e1sl\u00e1s<\/strong><\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">&#8220;The goal,&#8221; explain the promoters, &#8220;is to <strong>harmonize the rules already modified for Asz\u00fa<\/strong> starting from the 2013 vintage and make the production system for the region&#8217;s wine specialties more consistent.&#8221;<\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-9f922a1b\"><h5 class=\"uagb-heading-text\"><strong>TOKAJ SPARKLING WINE ONLY WITH BOTTLE FERMENTATION<\/strong><\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">Another significant change concerns the <strong>production method for Tokaj sparkling wines<\/strong>. The specification eliminates the possibility of fermentation in sealed tanks with CO\u2082 formation\u2014the Italian\/Charmat method, typical of Prosecco\u2014and establishes that the second fermentation must take place exclusively in the bottle. <\/p>\n\n<p class=\"wp-block-paragraph\">In other words, <strong>Tokaj Sparkling wine will be traditional method only<\/strong>. According to the document, the traditional method is considered &#8220;the only one suitable for the production of high-quality and prestigious sparkling wines in the region.&#8221; <\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-e672fc1b\"><h5 class=\"uagb-heading-text\"><strong>MECHANICAL HARVESTING PERMITTED ONLY FOR CERTAIN STYLES<\/strong><\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">The new specification also introduces greater flexibility in viticultural practices. <strong>Mechanical harvesting<\/strong> will be permitted for: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>base white wines<\/li>\n\n\n\n<li>wines intended for sparkling wine production<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">However, <strong>hand-harvesting<\/strong> will remain mandatory for traditional styles, particularly for <strong>asz\u00fa<\/strong> grapes, which must be individually selected.<\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-4b320808\"><h5 class=\"uagb-heading-text\"><strong>MANDATORY BOTTLING IN THE PRODUCTION AREA<\/strong><\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">The specification also confirms that most Tokaj wines must be <strong>bottled exclusively within the production area<\/strong>.
