It originated in an African archipelago marked by drought, wind, logistical isolation, and volcanic soils. It is concentrated almost entirely on the island of Fogo, at the foot of Pico do Fogo, the active volcano that dominates the island’s landscape and agricultural economy.

The production heart is Chã das Caldeiras, the inhabited and cultivated caldera between 1,500 and 1,700 meters above sea level. Here, vines grow among lapilli, black ash, dry stone walls, small orchards, coffee, and family livestock. Wine is not just an agricultural product. It is a form of permanence in a fragile territory, where every eruption has rewritten roads, houses, vineyards, and economic relations.

The “Fire Wines” of Cape Verde are extreme products in the most concrete sense of the term. They are born near the Equator, but at high altitude. They grow on young, volcanic soils that are poor on the surface and difficult to work. They depend on rain, labor, infrastructure, and the ability of local communities to transform marginal viticulture into a recognizable identity.

ACTIVE WINERIES IN CAPE VERDE – FOGO AND PRODUCTION FIGURES

Organized wine production on the island today revolves around three main entities: Adega Chã, Adega Sodade, Adega Maria Chaves, and Monte Losna. These are joined by family micro-productions, small local bottlings, and artisanal projects linked to Manecon, the traditional wine of Chã das Caldeiras.

Adega Chã is the symbolic winery of the caldera. It operates in the most iconic area of Cape Verdean viticulture and produces Chã branded wines in tinto (red), branco (white), rosé, and passito styles, available in all local supermarkets and grocery stores, including those run by Chinese owners in the more touristy areas.

Adega Sodade, on the other hand, operates in the Mosteiros area, with grapes coming from zones such as Achada Grande, Relva, and Corvo. It is an entity linked to dozens of local winegrowers and primarily produces white and red wines, as well as passito and spirits. The 2025 harvest highlighted the fragility of the supply chain: the winery reported a significant drop in production compared to 2024, with difficulties due to grape availability, technical issues, and the accessibility of vineyards in high-altitude areas.

Adega Maria Chaves, with its Monte Barro winery in São Filipe, represents the most modern and structured face of the sector. The project was born in the 2000s on land located between approximately 560 and 920 meters in altitude. The winery has a significant potential production capacity by island standards, but actual production varies based on the vintage and grape availability. Labels associated with the project include Santa Luzia, San Vicente, San Tiago, San Filipe, and Pico do Fogo.

In August 2025, Adega Maria Chaves announced a collaboration with the smaller Monte Losna winery, which produces a line of wines using the Monte Barro facilities in São Filipe.

The numbers remain small compared to those of major international wine districts. However, they are significant for Fogo’s agricultural economy. According to government documentation, wine production in Chã das Caldeiras rose from 68,400 liters in 2019 to 128,700 liters in 2022. This figure captures important growth in the caldera, though it does not definitively clarify the breakdown between cooperative wineries, private structures, and family productions.

DENOMINATIONS OF ORIGIN AND A NEW INSTITUTIONAL PHASE

In recent years, Fogo wine has entered a more institutional phase. In 2023, the Government of Cabo Verde, through the IGQPI and with support from the World Intellectual Property Organization, launched the technical process for the certification of Denominações de Origem for wines produced on the island.

The identified indications are “Fogo” and “Chã das Caldeiras”. This step is important because it moves Cape Verdean wine from an almost exclusively local dimension to a perspective of territorial protection, control, certification, and commercial enhancement. It is not just about registering a name. It is about building a framework of reputation for wines produced under very specific environmental conditions.

The certification process can also impact tourism. Fogo already has a recognizable viticultural landscape: vineyards in the caldera, black soils, altitude, an active volcano, agricultural communities, and limited production. An official denomination can help transform this uniqueness into value, without distorting the artisanal scale of production.

PRÓVINHO 2025 AND THE ROLE OF WINE TOURISM IN FOGO

The institutional strengthening was also confirmed by PRÓvinho 2025, the Salão Internacional do Vinho, Bebidas e Produtos Agropecuários organized in São Filipe. The event involved producers, enologists, institutions, and tourism operators, with activities across São Filipe, Chã das Caldeiras, and Mosteiros.

The central theme was the valorization of the Fogo/Brava region in the context of enology. The discussion focused on certification, sustainability, innovation, product qualification, and opportunities for consolidation in national and international markets.

For Cape Verde, wine is not a commodity. It is an agricultural product linked to tourism, catering, the diaspora, and the narrative of the territory. The possibility of visiting the caldera’s vineyards, tasting local wines, climbing Pico do Fogo, and meeting agricultural communities creates a model of wine tourism different from the European one. More essential, more fragile, but also more identity-driven.

GRAPE VARIETIES OF FOGO: MOSCATEL, PRETA TRADICIONAL, AND BABOSO NEGRO

The ampelographic heritage of Cape Verde has not yet been mapped with the precision of major European wine districts. Many varieties arrived with Portuguese colonization and adapted over time to the island’s extreme conditions. According to various local sources, phylloxera did not have the same devastating impact on Fogo as recorded in Europe. This favored the survival of ancient plant material and traditional propagation.

Among the most historically cited grapes are Preta Tradicional, Moscatel Branca (also known as Dona Maria), Moscatel Preta, and Branca Tradicional. To these are added Baboso Negro, Castelão, Malvasia, Verdelho, Listan Branco, and other varieties of likely Portuguese or Mediterranean origin.

The picture remains fluid. Some local names may indicate biotypes, synonyms, or adaptations that cannot always be linked with certainty to an international ampelographic classification. This is one reason why Fogo’s viticulture needs further genetic, agronomic, and enological studies.

Preta Tradicional is historically associated with the reds and rosés of the caldera. Moscatel Branco is central to the production of whites and passito. Baboso Negro has emerged more prominently, partly thanks to the recognition received by the Chã Tinto 2024. Cultivation often takes place in holes dug into the black soil, searching for the fertile layer beneath the lava covering.

CAPE VERDE WINES: TASTINGS FROM Chã, MONTE LOSNA, AND MARIA CHAVES

The three wines from the Viticultores de Chã das Caldeiras winery offer excellent value for money (all 89/100). A white from Moscatel Branca grapes (known as Muscat Blanc à Petits Grains and in Italy as Moscato Bianco); a Provence-colored rosé from Baboso Preto grapes (also found in the Canary Islands); and finally a red from Baboso Negro grapes, another name by which Baboso Preto is identified on the island.

All very fresh wines, from the 2025 and 2024 harvests tasted for Winemag. Characterized by great savoriness and drive, and a good aromatic-fruity component, followed by dry finishes that invite the next sip, in combination with the mineral-saline component. Good on their own, they perfectly accompany everything from an aperitif to a full meal.

The wines of Monte Losna, produced in the modern facilities of Adega Maria Chaves, are more complex and gastronomic than those of the Viticultores de Chã das Caldeiras line. And not just because of the vintages tasted, 2023 and 2024. The white Teresa, in honor of the matriarch Teresa Andrade Fontes, is a true gem, obtained from Moscatel Branca grapes from the Chã area. Then there is the red Nhô Djemi 2023, from Baboso Negro grapes. White and red with different scores, 92/100 and 90/100 respectively.

Great layering and balance between the mineral-saline component, typical of Fogo wines, and a texture and fleshiness that moves them from a local to an international dimension. They cost slightly more than the wines from the Viticultores de Chã das Caldeiras cooperative, but the value justifies the investment. Also tasted was the rosé from the Maria Chaves winery, a 2021 vintage Clarette that stands the test of time: the label name is San Vicente (87/100).

HIGH-ALTITUDE VITICULTURE NEAR THE EQUATOR

Cape Verde’s location makes this viticulture some of the most unique in the world. The archipelago is at tropical latitudes, but Fogo offsets the climate with altitude. The caldera offers cooler nights, temperature fluctuations, and higher humidity compared to coastal areas, while remaining in an arid and unstable context.

The vine does not grow in a tamed landscape. It develops within a volcanic area, on slopes and plateaus of lava origin, alongside family crops of apples, figs, pomegranates, quinces, peaches, and coffee. Viticulture is often integrated with other agricultural activities and a rural micro-economy based on small-scale production.

The wines produced are reds, whites, rosés, and passitos. The reds can reach significant alcohol levels. The whites are often linked to Moscatel. Passito is one of the most identity-defining products: it is made from white grapes left to dry on the lava stones of Chã das Caldeiras. The result is a sweet, amber wine, tied to local consumption and tourist visits.

MANECON, THE DOMESTIC WINE OF THE CALDERA

Alongside the structured wineries, another wine exists, more domestic and cultural: Manecon. It is the traditional wine of Chã das Caldeiras, produced by families and small farmers for their own consumption or local sale. It can be red or white, dry or sweet, although the sweet red version is the one most deeply rooted in the island’s imagination.

Manecon should not be confused with commercial winery labels. It is a community wine, with variable production standards, linked to family memory and festivals. The name refers to the oral tradition of the caldera and is often associated with the figure of Manuel Montrond, identified in some local narratives as one of the first inhabitants of Chã das Caldeiras.

Today, Manecon is also a key for tourism. Those arriving in Fogo to climb the volcano encounter the wine in homes, small restaurants, vineyard visits, and wineries. It is not a global product. It is a sign of the place. It tells more about the relationship between the inhabitants and the volcano than a standardized enological pursuit.

FROM PORTUGUESE COLONIZATION TO TWENTIETH-CENTURY VITICULTURE

The history of the vine in Cape Verde is linked to the arrival of the Portuguese and the spread of Mediterranean crops in the archipelago. Local sources place the introduction of vines and wine as far back as the colonial era, although its agricultural establishment was slow and discontinuous. Originally, vines were attempted on several islands, including Santo Antão, São Nicolau, Brava, Santiago, and Fogo.

However, it was Fogo that showed the most suitable conditions. The volcanic soil, high altitudes, and some areas cooler than the rest of the archipelago allowed the vine to find a balance. In the 19th century, Fogo wine was already linked to trade with Brazil and other territories of the Portuguese Atlantic.

In the 20th century, particularly from the first half of the century, cultivation consolidated in the Chã das Caldeiras area. Geographer Orlando Ribeiro described Fogo’s viticulture as a survival of the vineyards that had supplied Brazil in the past. This image is still useful. Fogo wine does not stem from a modern denomination, but from a fragile agricultural continuity that has remained alive in a peripheral and isolated territory.

THE ROLE OF COOPERATION AND THE BIRTH OF MODERN ADEGAS

The contemporary phase of Cape Verdean viticulture began between the 1980s and the 2000s. During this period, the wineries of Chã das Caldeiras and Achada Grande (later Adega Sodade) were built or reorganized, partly thanks to international cooperation programs.

Since 1998, support from Italian cooperation and the NGO Cospe has contributed to the technical growth of the Chã Cooperative. This step changed the nature of Fogo wine. Production no longer remained solely family-based but also became cooperative and commercial. Equipment, training, more controlled winemaking practices, and early forms of positioning in tourist markets and the Cape Verdean diaspora arrived.

In 2005, the Maria Chaves project also took shape, with the goal of creating a more modern supply chain capable of generating jobs, training, and agricultural income. The Monte Barro winery, inaugurated in the following years, brought a different logic: organized vineyards, a processing facility, bottling, and export attempts. It is a trajectory that coexists with the cooperative and family dimension without erasing it.

THE ERUPTIONS OF 1995 AND 2014: VINES AFTER THE LAVA

The recent history of Fogo is marked by the eruptions of Pico do Fogo. The 1995 eruption damaged homes and land. The 2014-2015 eruption hit Chã das Caldeiras even harder, destroying houses, infrastructure, and significant parts of the agricultural landscape. Lava flows wiped out portions of villages and necessitated the evacuation of the population.

For viticulture, it was a trauma. Some plantings were lost, logistics worsened, and reconstruction took years. But vines were planted again. After 2014, many farmers increased their vineyard areas, partly to meet local demand and growing tourist interest.

Difficulties remain concrete: road access, transport between islands, agricultural labor. And also: water availability, energy costs, and processing capacity. The problem is not just producing grapes. It is processing, storing, transporting, and selling them consistently.

INFRASTRUCTURE, WATER, AND ENERGY FOR THE FUTURE OF WINE IN CAPE VERDE

The growth of Fogo’s viticulture also depends on infrastructure. In July 2024, the new Campanas de Cima-Piorno road was inaugurated, 24 kilometers that improve access to Chã das Caldeiras from the northern part of the island. For the caldera communities, this is a significant intervention: it means better movement of people, greater safety in a volcanic area, more stable access to agricultural zones, and a more direct link to tourism and markets.

The Government also presented the work as a response to the vulnerability created by the 2014 eruption. For wine, the road is a production factor. Without efficient connections, the quality of the grapes and wine risks clashing with long times, high costs, and distribution difficulties.

Another decisive issue is energy. In 2024, Chã das Caldeiras received a new solar photovoltaic plant for community electrification. In a territory where water, refrigeration, agricultural processing, and wine storage also depend on energy costs, access to more stable energy can impact daily life and production activities.

THE FUTURE OF FOGO WINES

The future of Cape Verdean wine depends on three priorities: better identifying grape varieties, strengthening the technical capacity of wineries, and building a coherent commercial identity. Fogo already has what many regions seek: a strong territorial story, a unique landscape, high-altitude viticulture, volcanic soils, limited production, and a recognizable local tradition.

However, greater qualitative consistency is needed for Cape Verde wine. The “Fire Wines” may be fascinating, but they must contend with technical problems, production stability, and distribution. The international recognition obtained by Chã and Maria Chaves proves that the path exists. It doesn’t turn Fogo into a high-volume region, but confirms that the volcano can express wines with their own voice.

In this perspective, the certification of the “Fogo” and “Chã das Caldeiras” Denominações de Origem can become a decisive turning point. Cape Verdean wines are not predictable. They are born on a volcanic island, on black and unstable soils, in communities that have learned to start over after the lava. They do not seek standardized perfection. They tell the story of an agricultural frontier. And for this very reason, they represent one of the most original stories of Atlantic and “heroic” viticulture.

Cape Verde Wines, Cape Verde wine.
