In this context, <strong>calorie management<\/strong>\u2014particularly those from alcohol, but also from a diet that is often difficult to manage systematically\u2014becomes a central issue of <strong>health, sensory clarity<\/strong>, and <strong>professional sustainability<\/strong>. <\/p>\n\n<p class=\"wp-block-paragraph\">Wine is an integral part of the job. But from a nutritional point of view, it remains a specific energy source, often underestimated. We discuss this in <strong>Winemag&#8217;s new column, Alcohol and Health<\/strong>, under the supervision of <strong>nutritionist biologist Umberto Rossi<\/strong>.  <\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-8abe6063\"><h5 class=\"uagb-heading-text\">WINE FROM A NUTRITIONAL PERSPECTIVE<\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">According to leading international scientific authorities\u2014the <strong>World Health Organization<\/strong>, <strong>EFSA<\/strong>, and national nutrition institutes\u2014the <strong>energy provided by wine<\/strong> comes almost exclusively from <strong>ethyl alcohol<\/strong>. This provides <strong>7 kcal per gram<\/strong>, a value higher than that of carbohydrates and proteins (4 kcal\/g), and second only to fats (9 kcal\/g).  <\/p>\n\n<p class=\"wp-block-paragraph\">In practical terms:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>dry wine 12\u201313% ABV: <strong>70-80 kcal per 100 ml<\/strong> (just under a &#8220;classic&#8221; 125 ml glass)<\/li>\n\n\n\n<li>technical tasting pour (40\u201350 ml): <strong>30-40 kcal<\/strong><\/li>\n\n\n\n<li>professional session with 25\u201330 samples: <strong>800-1,000 kcal<\/strong><\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">\u00abThese are <strong>calories often not perceived as such<\/strong>, because they are consumed in small, repeated quantities outside of a meal context,\u00bb explains Umberto Rossi. <\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-9715fe19\"><h5 class=\"uagb-heading-text\">ALCOHOL CALORIES: &#8220;EMPTY ENERGY&#8221; FOR THE LIVER<\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">From a biochemical perspective, <strong>alcohol calories are defined as &#8220;empty&#8221;<\/strong> because:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>they provide no vitamins, minerals, or fiber<\/li>\n\n\n\n<li>they do not contribute to satiety<\/li>\n\n\n\n<li>they are metabolized with absolute priority by the liver<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">The <strong>liver, busy detoxifying alcohol<\/strong> through enzymes such as alcohol dehydrogenase and acetaldehyde dehydrogenase, temporarily suspends other metabolic processes, particularly fat oxidation. This mechanism is widely documented in scientific literature. <\/p>\n\n<p class=\"wp-block-paragraph\">The result is that <strong>calories introduced with alcohol are used immediately<\/strong>, while those from other foods are more likely to be stored. <\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-25ce719f\"><h5 class=\"uagb-heading-text\">ALCOHOL METABOLISM: WHAT HAPPENS IN THE BODY<\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">Metabolic physiology studies agree on several key points:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>alcohol cannot be stored and must be eliminated quickly<\/li>\n\n\n\n<li>its metabolism takes priority over carbohydrates and lipids<\/li>\n\n\n\n<li>repeated consumption, even in moderate amounts, alters the overall energy balance<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">\u00abFor a <strong>wine professional<\/strong>,\u00bb Rossi comments, \u00abthe problem is not the occasional tasting, but the <strong>daily or weekly frequency<\/strong>. A threshold that wine professionals easily exceed on intense work days.\u00bb <\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-4a2583fb\"><h5 class=\"uagb-heading-text\">EATING BEFORE TASTING: SCIENTIFIC EVIDENCE<\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">Numerous studies indicate that consuming a balanced meal before drinking alcohol:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>slows down ethanol absorption<\/li>\n\n\n\n<li>reduces blood alcohol peaks<\/li>\n\n\n\n<li>improves blood sugar stability<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">The <strong>most effective combination<\/strong>, from a physiological point of view, includes:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>low-glycemic index complex carbohydrates<\/li>\n\n\n\n<li>lean proteins<\/li>\n\n\n\n<li>a moderate portion of unsaturated fats<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">This approach does not alter taste sensitivity, but protects the body and improves endurance during prolonged tastings.<\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-d7b0d7e6\"><h5 class=\"uagb-heading-text\">HYDRATION AND SENSORY PERFORMANCE<\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">Alcohol has a documented diuretic effect.
