Produced entirely in Puglia, Notte Rossa ros\u00e9 sparkling wine comes from espalier-trained vineyards at an altitude of about 100 meters above sea level, in an area characterized by warm climate, low rainfall, and marked temperature variations. <\/p>\n\n<p class=\"wp-block-paragraph\">The <strong>hand-harvested grapes<\/strong>, picked early but at proper ripeness for producing a naturally &#8220;flavorful&#8221; sparkling wine, are selected to maintain a balanced acidity profile, essential for subsequent refermentation. Harvest typically occurs in the last weeks of August, <strong>during the cooler morning hours<\/strong>.  <\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-cd4b85a7\"><h5 class=\"uagb-heading-text\"><strong>AUTOCLAVE VINIFICATION AND BOTTLE AGING<\/strong><\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">The vinification of <strong>Notte Rossa Extra Dry Ros\u00e9 Sparkling Wine<\/strong> follows a process that emphasizes delicacy and elegance. The grapes undergo gentle pressing, yielding the first fraction of free-run must. This is fermented at low temperature to preserve aromas and freshness.  <\/p>\n\n<p class=\"wp-block-paragraph\">The secondary fermentation takes place in autoclave, where the wine rests for about a month in contact with its own yeasts. Subsequent aging continues in bottle, always at controlled temperature. The result is a <strong>sparkling wine with fine and persistent perlage<\/strong>, also suitable for serving by the glass.  <\/p>\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-59f98210\"><h5 class=\"uagb-heading-text\"><strong>NOTTE ROSSA EXTRA DRY ROS\u00c9<\/strong>: <strong>TASTING AND PAIRINGS<\/strong><\/h5><\/div>\n\n<p class=\"wp-block-paragraph\">In the glass, Notte Rossa Extra Dry Ros\u00e9 presents a brilliant pale pink color with onion-skin reflections. The aromatic profile highlights citrus notes and fragrant red berries. On the palate it shows full of fruit, dry and appealing, with <strong>marked and enticing freshness<\/strong>.  <\/p>\n\n<p class=\"wp-block-paragraph\">A sparkling wine designed to accompany <strong>seafood cuisine and light fish or vegetable dishes<\/strong>, even with some structure. Perfect also as an aperitif, it finds its ideal expression served at 6-8\u00b0C.
